Overview

The gastronomic experience is no longer just about cooking skills. Students today who aspire to become professionals in the industry, need to understand nutrition, culinary artistry and menu planning amongst other things.

Our culinary arts degree program prepares students to address all aspects of the kitchen and meet the challenges of an increasingly sophisticated and demanding culinary industry. In addition to subjects such as Culinary Essentials, Garde Manger and Basic Patisserie, students will also undertake subjects such as Corporate Social Responsibility, Entrepreneurship, Hospitality Marketing and more.

All courses are taught by professional chefs who have a strong presence in the culinary and hospitality sector and are masters of the industry.

The course is designed to equip the students with a complete knowledge and skills ranging from basic culinary science to professional restaurant management and operations.

Our culinary arts degree program allows students may choose from three different specialisations:

  • Culinary Operations

Exposes students to culinary traditions and methods, from Classical French Cuisine to Asian delights, through in-depth knowledge of both management and practical aspects.

  • Baking and Pastry

Develops students’ skills in various baking and pastry techniques while furnishing them with useful managerial skills so they may excel in the industry.

  • Students’ undertaking either specialisations can now further enhance their culinary education with the semester abroad option at ALMA La Scuola Internazionale di Cucina Italiana, Italy (separate charges apply).

Entry Requirements

Academic Qualification

  • STPM / GCE A Levels: 2 Principal Passes
  • UEC: Min. 5 Credits
  • Diploma: Pass with min. CGPA 2.00
  • Foundation Studies: Pass with min. CGPA 2.00

English Requirement

  • Local Student: Band 4 in MUET
  • International Student: Band 5.0 in IELTS; or a min score of 42 (IBT) or 410 (PBT) in TOEFL ; or score 47 and above for Pearson English Test
